Storage is extremely important to preserve the nutritional content of all oils. Heat and sunlight are the two problem areas for Olive Oil.
Selection
By far the best is Cold Pressed Extra Virgin Olive Oil… the others are just good.
Things to know
Even if you use olive oil once it has been heated on the stove it converts from a Menstruated Acid to a Trans Fatty Acid (bad). So cooking with it does not really count in helping the body. Use it as a dressing on vegetables, whole grain pasta, and dipping breads.
